It didn’t take long for wireless computing and the mobility it affords to become an accepted part of the landscape of public spaces, offices and homes. But there was still a catch: you couldn’t stay connected outside of the hotspots offered at cafes, airports and hotel lobbies. WiMAX changes all of that as Baltimore becomes the first city in the country where a full-scale commercial wireless broadband rollout (offered by Xohm) will mean that users can actually roam wherever they want and connect to the Internet with notebook computers and Mobile Internet Devices. It opens the door for a wide range of embedded devices in things like parking meters, kiosks and anything else you can think of that would benefit from Internet connectivity. The launch features not only new WiMAX products from Xohm, but devices from handhelds to laptops that feature Intel’s new WiMAX enabled chips. You can follow WiMAX stories on blogs.intel.com/technology and scoop.intel.com. New to WiMAX? Learn more about WiMAX here and <a here. And see how WiMAX is being used to connect people with education, healthcare and new opportunities in developing countries.

It’s been awhile since we first began hearing about WiMAX, and it may have sounded impossible at first. Not to Frank Gruber. He says it was inevitable, that it works, and it’s cool.

Beginning this week, you can think of Baltimore as one big hotspot. The computing potential for a city that’s completely wirelessly connected is huge. No matter where you are, you are connected. Simply put, it is the next generation of mobile broadband access.

Broadband connectivity is crucial for emerging communities and markets. Until recently, many governments turned a deaf ear to the calls for infrastructure in many of the world’s poorest cities and in rural areas where outreach was almost non-existent. But the urgency has been made clearer as communities, technology companies and non-governmental organizations have begun partnering in initiatives to bring the Internet and other broadband services to the world’s people. At the Third Global Knowledge Conference in Kuala Lumpur, Malaysia (December 11-13, 2007), many activists say the effort can’t happen without corporate cooperation. Alcatel Lucent’s Valerie Faudon says such meetings help galvanize projects like Broadband for All (BB4ALL). PodTech’s Jason Lopez filed this podcast from Kuala Lumpur.

Gaming is fast gaining track in India and Mumbai is the epicenter for the industry. I finally caught up with Quentin Staes-Polet, CEO of Kreeda in Bangalore to find out about Kreeda, doing business in India and the challenges of doing business in India. Kreeda bills itself as India’s first dedicated Massive Multiplayer Online Game (MMOG) Operator In Part-1 of the interview we find out how Quentin, who is originally from Belgium ended up starting a startup in India. What advice does he have for entrepreneurs who want to do business in India? Quentin says there is lots of money available in India and the investors are very savvy. While finding money is money the key is to find good money points out Quentin.

Earlier this year Kreeda received an undisclosed amount of money from IDG Ventures India and Bodhi Softbank Holdings. I asked Quentin the reasons on why they opted not to disclose the amount of money they received.

As you might remember, we made a new worm bin after our original bin failed. This new one is doing great! The drainage holes in the bottom have helped keep it moist but not too wet, the shallow shape allows the worms to get to everything faster and the blending of food scraps allows the worms to eat right away. Today we harvest all the rich vermicompost (soil) and sprinkle it into one of our garden beds. Potted plants also LOVE this stuff. I’ve brought back to life more than one of our failing ferns with a scoop of nutrient rich vermicompost. Why buy chemically fertilizer when you can use worm poop?

While few panelists at the conference agreed how to describe the megadeals of 2006 — bubble, rocket, etc. — most everyone looks forward to normalcy in 2008. PodTech’s Jason Lopez attended the conference and chatted with panel moderator Gergory Peterson, partner with PriceWaterhouseCoopers.

The Green City Gallery is an eco-demonstration site/art gallery/community meeting and event space in downtown Berkeley, Calif. A collaboration between Bay Localize, an Oakland-based non-profit focused on post petroleum community empowerment, and Dig Cooperative, an eco-design crew helping to re-invent urban environments to be more sustainable. The Green City Gallery was established to showcase to the public, as well as local politicians and business folk, that green does not have to be hippy-fringe but practical, clean and smart. Some of our favorite demonstrations are the roof top garden (keeps buildings naturally insulated, provides green space and food to occupants), the constructed wetland/greywater filtration (filters all your household water naturally through gravel and plants right back out to your garden) and last but not least, the composting toilet and urinal (fertilize your plants every time you go!). Thanks to Ingrid from Bay Localize for touring us around! If you’re in Berkeley, head over to the space, it’s at 1950 Shattuck Ave., in downtown Berkeley.

We’re back in the kitchen, turning up the heat on raw foods with South of the Border Tomatillo Rawvioli! I wanted to do a dish that showcased the delightful flavor of tomatillos, the husky green cousin of the tomato. The resulting creation is a lively celebration of Mexican-inspired flavor, beauty and nutrition that’s the perfect antidote to the summertime dinner blahs! Why sift through yet another boring pile of the same old greens, or clog your arteries with yet another helping of mayo-drenched macaroni salad, when you could be enjoying a satisfying plate of fresh tomatillo sauce with light cucumber rawvioli filled with rich, spicy cashew filling?

This is a rhetorical question.

The zappy flavor of the tomatillo is happily married to the smooth creamy richness of avocado, and the whole affair is well-grounded with the earthy taste of cumin. I love this stuff; it tastes so great I can barely remember that it’s healthy, raw and vegan! It tastes so great, I can barely remember what I’m doing….

Tomatillo Rawvioli
Makes 3 large, or four small servings

Zesty Tomatillo Sauce:
1 1/2 C tomatillos, chopped
1/2 a large avocado
1/4C sweet white onion, chopped
1/4C cilantro leaves
1 clove garlic
1/2 a large jalapeno
1t cumin
1t agave syrup
1t stoneground mustard
Sea salt to taste
Optional 1T olive oil or water to thin

Kickin’ Cashew Ricotta:
1C raw cashews, soaked 1hr. and drained
1 clove garlic
Juice of 1 lemon
1T nutritional yeast
2t cumin
1t chili powder
Sea salt and fresh black pepper to taste

1 medium English cucumber for the wrappers

Blend all the tomatillo sauce ingredients in a food processor or blender until smooth, adding additional water or olive oil if necessary. Set aside and blend all cashew ricotta ingredients in food processor until creamy and fluffy. Cut the cucumber into 24-28 round, thin slices with a vegetable peeler or mandoline. Scoop about 2t of the filling onto each slice and fold in half. Serve with the tomatillo sauce, and garnish with minced jalapeno or additional cilantro.

Delicioso!

Last weekend, while we were at Get Tough or Die Farms (Tanja’s Mom’s house), we were introduced to a new summer dessert. In Sacramento, the mid-day temperature can get brutal by this time of year, and one day while we were all sitting outside sweltering, Melissa brought out a round of Watermelon Granitas. I was wowed, had two, and hinted for Tanja to use her familial leverage to get the scoop on the dish.

This is surprisingly easy for a dessert that packs such a potent refreshment quotient, and it’s shockingly guilt-free as well.

Watermelon Granitas:
4 Cups watermelon, chopped
Juice of 1 lime
Pinch of sea salt
1-2 Tbsps agave nectar, or to taste

Makes 4-6 servings

Blend all ingredients together until smooth, about 20 seconds. Pour into shallow pan and place in freezer 3-4 hours, stirring occasionally until frozen. To serve, scrape ice crystals with a spoon or fork into serving glass, garnish with mint leaves or basil.

This site has a few fun granita recipes we’d like to try out soon. Consider substituting the sugar with agave syrup for a lower glycemic punch. A quick search for “granitas” will turn up many more recipes. If you find any winners, please do let us know!

Big thanks to Melissa for the show idea today, and so generously showing us how to make the recipe!

Announcement:

We’d like to know more about you. When you have a minute, please fill out our survey — it’s online at Freshtopia.net. Thanks everyone!

Kevin Bayuk rents an apartment in the Haight Ashbury district of San Fransicso. He also grows a large amount of his own food, actively composts, raises ducks and captures rainwater - total urban permaculture. One might think you need to own a large plot of land in the country to create an abundant food-growing system, but Kevin proves this theory wrong on a number of counts. Often the density of an urban community is a hundred times greener than suburban areas because resources are so close together. You can walk to the store or take an electric bus over to work. Kevin shows us how he practices urban permaculture in all aspects of his life- from growing food to educating his community. Check out the Urban Alliance for Sustainability and Daily Acts for more info on getting hip to urban permaculture. Thanks Kevin!
