This is a timeless problem that they’re trying to solve. The problem is, they’ve mired their solution in unintuitive terminology. It didn’t start making sense until the actual visual walk-through.
Is the following statement true?
LUNARR is a document sharing system where each document remembers 1) It’s specific version history and 2) all email correspondence regarding its edit-history.

That statement is mostly true. LUNARR remembers all email correspondence and all edit history, but not necessarily together. Email history is on the back, along with the edit-history, which is held in on left-hand side under “revisions.”
Also, LUNARR is just in the alpha stage. Drastic beta changes are underway - including a brand new UI.
